How to Make Perfect Focaccia Bread from Scratch

- ½ teaspoon honey or granulated sugar – I use raw unfiltered honey
- 1 cup water (lukewarm) make sure it’s 110 degrees
- 1 teaspoon active dry yeast
- 2¾ cups all purpose flour
- 1 teaspoon salt
- 1 tablespoon olive oil but keep the bottle handy
- Sprinkle on top 1 tablespoon coarse salt
- 2-3 tablespoons olive oil
Let’s Get Started
In your heated water, stir in your honey or sugar till it’s dissolved. Then add your active dry yeast. Let sit for at least 10 minutes to give your yeast time to bloom.
While you are waiting, in a mixing bowl or on your table, mix together the flour and salt.
After the 10 minute wait on your yeast mixture, add it to your flour and add in the olive oil. If you are using a mixer, do this with the dough hook attachment. Mix it for 8 -10 minutes on a medium setting. If you are doing it the old fashion way, make a well in the flour and add the ingredients, then gently mix all together. Once it is all incorporated, knead it for 6-8 minutes until the dough is elastic and smooth.
Place the dough in a slightly greased bowl (olive oil) and cover with plastic wrap. Set aside in a warm, draft free place on your counter. Or you can do what I do, set it in your oven (NOT ON) and turn the light on only. Let it sit for an hour.
Return the dough to your counter top, punch it down and knead it for just a minute or two. Place and spread the dough out in a 12 inch skillet or a pizza pan. Let it sit for another 15 minutes covered. Then take your knuckles or the tips of your fingers and gently make some indentions. Drizzle olive oil over it, spread it out to cover the top, it will leave some in the little indentions you made.
Bake at 400 degrees for 15 to 20 minutes!
Now you can top it with some many things like course salt, garlic powder, rosemary, herbs, olives tomatoes, meats…basically what ever you like on top. Or make a desert focaccia using cinnamon and sugar or chocolate chips for example.
