One of the best taste for a cheese and one we use in several of our dishes is cold smoked. The flavor of the hardwoods that are infused into Parmigiano, Havarti, Cheddar, Pepper Jack, Colby, Parmigiano Reggiano, just to name a few enhance a dish to the next level.
We search for the best cheese and spend 3 to 4 hours smoking it. Then we wrap each piece and vacuum seal it to keep the freshness.
